We’re going to see a lot more of Michael Chiarello in wine country.

PLT (Pancetta, Lettuce and Tomato) Sandwich

You've probably figured it out already. A PLT is a BLT with pancetta in place of bacon. I’ve made a few other refinements, too. Instead of putting the bread in a toaster, I butter it and grill the sandwich on a griddle or in a cast-iron pan. And I weight the sandwich while I'm grilling it, which makes the bread brown better. Adding basil to the mayonnaise gives it an herbal lift, and romaine hearts contribute a fresh crunch. I love the contrast of crisp, hot, cool and creamy in this sandwich.

Helping teens create healthy habits

Although my regular job is helping adults achieve a healthy weight, I also work with teens. Sadly, the epidemic of teen obesity means I could find them anywhere — even here in Napa. Last fall I flew to the Midwest to consult with high school students for a teen obesity show called Student Body (now airing on The N Network).

You might want to make two, and reheat the second one tomorrow morning! Add a piece of fruit and a glass of milk and you have a meal. Best of all, you’ve met half the day’s calcium requirement already!
