Cherry Walnut Bars

1 cup all-purpose flour

2 Tbsp. sugar
1/3 cup unsalted butter

1/2 cup finely chopped walnuts (for crust)
1 1/4 cup sugar

2 Tbsp. all purpose flour
2 beaten eggs

2 Tbsp. milk

1 Tbsp. finely shredded orange peel

1 tsp. vanilla

1 cup chopped dried cherries

1/2 cup shredded coconut

1/2 cup finely chopped walnuts (for filling)

For crust:

In a medium bowl, combine the 1 cup flour and the 2 Tbsp. sugar. Cut in butter until coarse crumbs form. Stir in 1/2 cup walnuts. Press flour mixture into the bottom of an ungreased 13 by 9 by 2-inch baking pan. Bake at 350 F. for 15 minutes.

For filling:

Meanwhile, combine the 1 1/4 cups sugar and 2 Tbsp. flour. Stir in the eggs, milk, orange peel, and vanilla. Fold in cherries, coconut, and 1/2 cup walnuts. Spread over partially baked crust. Bake in a 350 F. oven for 25-30 minutes or until top is lightly browned. Cool in pan — cut into bars when still warm. Makes 3 dozen.
